Lamb Kofta with Mango, Mint & Yoghurt Salsa

Serves 4

4 skewers
500g lean minced lamb
1tsp cumin
2 tsp coriander
2 big garlic cloves, crushed
? tsp black pepper
? tsp salt

Mango Mint and Yoghurt Salsa
? cup prepared Hansells Thick & Creamy Natural Greek Style Yoghurt
? cup, chopped fresh mango
? cup chopped fresh mint
Salt

In a bowl mix together all the ingredients until well blended. Cover and refrigerate for 2 hours.

Soak skewers in water, Shape ? of the lamb mixture into sausages around skewers. Make sure the meat is spread to an even thickness. Refrigerate until you are ready to cook.

Preheat pan to medium high heat. Brush lamb skewers with oil and arrange on pan. Cook for 10 minutes or until cooked, turning as needed to brown evenly.

Mango Mint and Yoghurt Salsa
? cup prepared Hansells Thick & Creamy Natural Greek Style Yoghurt
? cup drained, chopped fresh mango
? cup chopped fresh mint
Salt

For the salsa, mix, yoghurt, mango and mint together . Season with salt to taste.
